From Sweet to Savory: The Old Mill

So the work on The Old Mill on this magical island of Bequia is almost complete. In addition to producing our exquisite line of gourmet finishing salts, we’ve been busy investing in and preserving a piece of history here on the island.

As part of Spring Plantation dating back to the early 18th century, where sugar, then indigo, arrowroot, cassava and copra were produced; it is most likely the oldest structure on the island. For the past two years we’ve made every effort to restore this exquisitely beautiful structure as our new home base for Grenadine Sea Salt.

Essentially a ruin when we started, The Mill has now been transformed into the most beautiful version of its’ modern self. Rather than tearing any of the ancient beauty down, we labored to build support around it. Now in the finishing stages, we have artisans re-pointing the existing stonework and laboring to make sure any new additions are in keeping with the old. We hope it to be a showcase not only for our salt but for the history of Bequia as well. Here you see Jerry peering into the old indigo vats (always three), the original area where the indigo was most likely stored, the primary ‘ancient wall’, and our craftsman working on the future Cleanroom.

Here you see the finished Cleanroom where the sea salt gets bottled once it is harvested from the stills, our new reception area, the preserved and fortified ‘ancient wall’ outside, and our Kitchen which was designed to feel part of the ruin, where we prepare our blends and host tastings.The Mill will be both a production facility and learning center where we will host tours, culinary workshops and salt tastings—making Grenadine Sea Salt a desirable destination for travelers and tour operators looking for a uniquely local, historical, and artisanal culinary experience.
